Oatmeal Raisin Cookies

I want to share this recipe to anyone stumble on my site. I made this yesterday and its yummy. You can actually found this recipe at Quaker Oat Lid. I made some changes with this recipe like putting a mix nuts instead of pure raisins and it turned very good cookies.

1/2 cup (1 stick) plus 6 tbsp. butter, softened
3/4 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
3 cups Quaker Oats (quick cook or old fashioned, uncooked)
1 cup raisins ( I used mixed nuts, with dried fruits 2 cups)

1. Heat oven to 350F.
In large bowl, beat butter and sugars on medium speed of electric mixer until creamy..( I just used fork..:()
2. Add eggs and vanilla; beat well
3. Add combined flour, baking soda, cinnamon and salt; mix well.
4. Add Oats and raisins or mix nuts, mix well
5. Drop dough by rounded tablespoons onto ungreased cookie sheets.
6. Bake 8 to 10 minutes until golden brown. Cool 1 minute on cookie sheets; Cool completely. Store tightly covered.

Oatmeal raisin cookies are my first made cookies and the first one I've made not so chewy. I learned that you just need to drop the dough in the sheet and don't touch or flattened or formed them which I did the first time I made them...Just drop them and put in the oven.

Enjoy your cookies... :)
